Heidi has spent a number of years as a competitive grilled-cheese chef who is the most decorated Grilled Cheese Invitational contestant in its history. She decided to get into the restaurant business after being encouraged by her competitors, judges, family and friends and opened up her first restaurant in 2010 at 1 South Park Ave near the Giants baseball stadium. She integrates a scientific approach into her craft as she holds both a Bachelor’s and Master’s degree in engineering from MIT.

Nate works as the general manager of The American Grilled Cheese Kitchen. His restaurant skills were honed by working his way through UCLA studying economics and the classics with multiple foodservice positions. Nate draws on his experiences as host, food server, and bartender/bar manager to create the inviting atmosphere that THE AMERICAN has to offer.
