Alma, a transaction completed by Restaurant Realty Company, will be opening soon at 1107 Valencia Street, San Francisco, at the corner of 22nd and Valencia, the former site of The Rooster. Alma will be a reinvented reincarnation of Che Bar y Restaurante Nuevo Latino which was a San Francisco Chronicle’s Top 100 restaurant due to its executive chef and partner Johnny Alamilla.
Johnny Alamilla, the chef and principal of Alma has 19 years of restaurant experience training under Madeleine Kamman, one of the best French culinary instructors in the United States, and also holds a B.A. in Business from Towson State University and an Associates degree in professional cooking from the Baltimore International Culinary College.
Alma’s Nuevo Latino cuisine will combine and refine foods from cultures all over Latin America, from Cuba to Mexico to Puerto Rico right down to the southernmost tip of South America. The results are big bold combinations of flavors. For example, a succulent cumin and chile cured pork loin chop, grilled and served with a tangy cabbage, jicama and lime slaw and a lusty smoked chili jus. The food will be a rich blend of traditional Latino recipes with contemporary flair. Johnny draws inspiration from strong technique learned in his years spent at Postrio, Boulevard, Farrralon and Che, incredible California ingredients, and memories of flavors emanating from his Honduran grandmother’s kitchen.
