Master Baker, Jackie Jegat, the owner and founder of Paris Bakery, was born in Doué-la-Fontaine, France where he began his baking career at the age of 16. After two years of apprenticeship, he moved to Paris. In 1978, at age 23, Jackie opened his first bakery in Chatou, a suburb of Paris, where he soon brought his brother Eric to serve as his apprentice. In 1979, Jackie opened a new bakery in the 10th Arrondissement, Rue Faubourg St. Martin. After much success, he made his way to San Francisco in 1981. There, he worked at Bakers of Paris.

Four years later, in 1985, Jackie moved to Monterey, and bought Maison du Croissant on Bonifacio Place, initially calling it Le Montmartre (now known as Paris Bakery). Jackie had become so busy he sent for his brother, who was still in Paris. Eric moved to Monterey and worked with his brother. In 1997, Jackie opened a wholesale warehouse in Seaside. The Wholesale department has been supplying fresh baked goods 365 days a year to the Monterey Peninsula’s well renowned restaurants, hotels, coffee houses, and delicatessens. In 1997 not only did they expand the bakery to the adjoining building, but their daughter, Vivianne joined the family business as the Monterey manager and when Seaside opened in 1998 Vivianne managed and grew the wholesale side of the business, promoted in 2003 to the Director of Operations for the whole business.

The Bakeries consists of a 2,500 sq ft town center retail and café location in Monterey and an 8,500 sq ft wholesale Bakery kitchen with retail shop located in Seaside, just a few miles away. Having steered the ship through the pandemic and after 39 years the family decided it was time to hang up their aprons and pass on the mantle and retire.

The owners reached out to Restaurant Realty and Keith Simpson who had just recently sold four high profile restaurants in Monterey and Salinas. Under Vivianne’s stewardship, modernizing the systems and delegating responsibilities to key management, 2023 became a record-breaking year. By late 2023, Hector Capelo, from Los Angeles was successful in his bid to purchase. Along with his SBA lender & Old Republic Title, escrow closed on February 15th 2024.

Hector and Vivianne are now working closely together to ensure a smooth handover to their 50 employees and wholesale accounts. Hector has plans to expand, especially in the wholesale department by adding small pop-up stores in the areas of Carmel and Salinas being supported by the Seaside bakery daily. Eric Jagat (Jackie’s brother) is now the Head Baker and is looking forward to being part of new owner, Hector’s expansion plans while maintaining the high quality standards Paris Bakery is renowned.

Hector has purchased a highly successful Bakery business, and we all wish him good fortune for the future. Jackie, Vivianne and the family can now enjoy some well-earned rest including visiting their roots in France to once again meet up with the family and friends that encouraged & helped make their dreams come true.
