Trappist Bar has been a niche, beer-lovers, hot spot since 2007 when Aaron Porter and Chuck Stilphen first opened. Both beer experts and enthusiasts, they shared their desire of opening a Belgium style pub.
Additionally, both men are veterans in the bar industry. Chuck, was also an owner of the acclaimed Mikkeller Bar in San Francisco, which Restaurant Realty Company and agent Andy Mirabell sold in 2020.
Trappist was thoughtfully designed keeping historic touches, a classic pub look, and installing beer systems that upheld the integrity of the eclectic Belgium and local beers they served. During the pandemic Trappist also expanded the great communal patio in back of the large brick building to accommodate its loyal patrons.
Upon listing Trappist for sale in 2021, owner Aaron Porter and longtime friend Adair Paterno, owner and founder of , Sante Adairius Rustic Ales, along with her partner Tim Clifford, realized the Trappist space may serve as the perfect location and opportunity to expand their Bay Area presence.
Sante Adairius Rustic Ales or ‘SARA’ was started in Santa Cruz and created a frenzied fan base and national acclaim, most in part from their wildly popular wild-fermented saisons. In April, SARA will open its third taproom within the Trappist space which existed for 14 years.
